Dalgona coffee, that impossibly fluffy, cloud-like whipped coffee that blew up on social media, is one of those rare trends that actually lives up to the hype. It looks gorgeous, it tastes great, and it takes about five minutes to make with ingredients you probably already have in your kitchen.
Here is the deal: you whip equal parts instant coffee, sugar, and hot water into a thick, mousse-like foam, then spoon it over cold (or hot) milk. That is it. Dead simple.
What You Need
- 2 tablespoons instant coffee (this only works with instant, do not try espresso or brewed coffee)
- 2 tablespoons sugar (white granulated works best)
- 2 tablespoons hot water
- A glass of milk (any kind, dairy, oat, almond, whatever you like)
- Ice (if making it cold)

1. Combine the instant coffee, sugar, and hot water in a bowl.
2. Whip it. You can use a hand mixer (easiest, takes about 2 minutes), a milk frother (works but takes longer), or a whisk (be prepared for a 10-15 minute arm workout). Whip until it turns from dark brown liquid into a thick, pale, caramel-colored foam that holds stiff peaks.
3. Fill a glass with ice and milk.
4. Spoon the whipped coffee on top. Do not stir, let it sit as a layer. When you are ready to drink, stir it in gradually or sip through the foam.
Variations Worth Trying
- Mocha Dalgona: Add 1 tablespoon cocoa powder to the mix before whipping
- Vanilla Dalgona: Add half a teaspoon of vanilla extract to the milk
- Matcha base: Skip the milk and pour the whipped coffee over an iced matcha latte for a wild caffeine combo
- Sugar-free version: Swap sugar for erythritol or monk fruit sweetener, it whips up almost identically
Dalgona is a fun weekend project, a great party trick, and genuinely delicious. It is not going to replace your morning espresso ritual, but when you want something different and do not mind the instant coffee trade-off, it delivers.
