Honey Process Coffee: The Sweet Spot Between Washed and Natural

If you have been diving into specialty coffee, you have probably noticed "honey process" on some bags and wondered what it means. No, there is no actual honey involved. The name comes from the sticky, honey-like mucilage (fruit layer) that remains on the coffee bean during drying. And the flavor it creates, sweet, complex, and uniquely textured, is exactly why more and more specialty roasters are seeking out honey-processed lots.
Honey processing sits between washed and natural, borrowing the best qualities of both. Understanding how it works helps you predict what it will taste like and choose beans you will love.
How Honey Processing Works
To understand honey process, you need to know the alternatives:
- Washed process: The cherry skin and all fruit mucilage are completely removed before drying. The bean dries clean. Result: bright, clean, high-clarity flavors.
- Natural process: The entire cherry (skin, fruit, mucilage, everything) dries around the bean. Result: heavy fruit flavors, wild sweetness, sometimes funky or wine-like qualities.
- Honey process: The cherry skin is removed, but some or all of the mucilage remains on the bean during drying. How much mucilage is left determines the type of honey process and significantly affects flavor.

The amount of mucilage left on the bean creates a spectrum, and producers have developed categories based on how much sticky fruit remains and how long the bean dries:

The more mucilage remains and the longer the drying takes, the more the fruit sugars ferment into the bean, adding sweetness and complexity. White honey is barely distinguishable from washed. Black honey is close to a natural. The middle points, yellow and red, are where honey processing truly carves out its own identity.
Why Producers Choose Honey Process
Honey processing is harder than both washed and natural methods. It requires constant monitoring during drying to prevent mold and uneven fermentation. So why bother?
- Water conservation: Washed processing uses enormous amounts of water. Honey processing uses significantly less because the mucilage is not washed off. In water-scarce regions, this is a major practical benefit.
- Higher cup scores: When done well, honey processing can produce coffees that score higher than the same bean washed. The added sweetness and complexity from the mucilage add dimensions that washing removes.
- Market premium: Specialty buyers pay more for well-executed honey process lots, incentivizing producers to invest in the extra labor. This is good for farmers and good for the coffee.
How to Brew Honey Process Coffee
Honey-processed coffees are versatile, but their sweetness and body shine in certain methods:
- Pour-over: Great for white and yellow honey. The paper filter keeps things clean while letting the sweetness through. Use a standard recipe from our pour-over guide.
