Why Your Espresso Crema Disappears (and How to Fix It)

A shot pours with a thick, golden-brown crema layer on top, then that layer thins and vanishes within seconds, well before the cup even reaches the counter. Crema is a layer of tiny CO2 bubbles trapped in emulsified coffee oils, formed when 9 bar of pressure forces dissolved carbon dioxide out of the grounds. Persistent crema needs four things lined up at once: fresh beans, a properly matched grind, correct pressure, and adequate extraction. When any one of those is off, crema thins out or disappears fast.

1. Beans Are Too Old
This is the leading cause of thin or missing crema by a wide margin. Roasting drives a chemical reaction that produces CO2, and that trapped gas is the raw material crema is made from. Beans hold onto meaningful CO2 for roughly 2 to 4 weeks after roasting; beyond that window, most of the gas has escaped through the bean structure even in a sealed bag. No gas left to release under pressure means no crema, regardless of grind or machine settings. The fix is to check the actual roast date printed on the bag, not a generic "best by" date that can be 6 to 12 months out, and to buy in quantities that get used within 2 to 4 weeks of that roast date. Beans that are 4 to 14 days past roast typically produce the thickest, most persistent crema, since the CO2 has had a few days to stabilize but has not yet substantially depleted.
2. Grind Is Too Coarse
If water passes through the puck too quickly, the shot is under-extracted, and there is not enough resistance or contact time to emulsify oils and trap CO2 bubbles properly under pressure. The result is thin, large-bubbled crema that collapses within a few seconds instead of a fine, persistent microfoam that lasts through most of the drink. Dial the grind finer in small steps, using the grind size guide to track settings, until a standard 18g in, 36g out double shot pulls in the 25 to 30 second range.
3. Low Brew Temperature
Water that is not hot enough under-extracts the shot and produces measurably less crema alongside a thinner body. Most quality espresso machines are built to brew in the 195-205°F (90-96°C) range; a machine set below that band, or one that has not been on long enough to stabilize, will consistently under-perform on crema even with fresh beans. Confirm the target temperature for a given machine against the espresso machine database. If the machine allows temperature adjustment, check it is not set toward the low end of its range. If it does not, run a blank shot through the group head first to bring the metal up to temperature before the real pull.
4. Pre-Ground Coffee
Ground coffee loses CO2 dramatically faster than whole beans because grinding multiplies the exposed surface area many times over. Pre-ground coffee, even from a fresh roast date, can lose most of its crema-producing gas within days rather than weeks. Grinding immediately before pulling a shot, with even an entry-level burr grinder in the $150 to $200 range, produces a visibly thicker and more persistent crema than the same beans pre-ground and stored.
5. Light Roast Beans
Lighter roasts inherently produce less crema than darker roasts, independent of freshness or technique. The longer time at roasting temperature for a dark roast draws more oils to the bean surface and typically generates more CO2 overall, both of which contribute directly to thicker, longer-lasting crema. A well-executed light roast shot can have noticeably less crema than a well-executed dark roast shot pulled on the same machine with the same care, and that difference alone does not indicate a problem with the extraction.
Ruling Out a Pressure Problem
If beans are fresh (4 to 14 days post-roast), the grind is dialed to a 25 to 30 second shot time, brew temperature is confirmed in range, and crema is still thin, flat, or entirely absent, the issue is likely mechanical rather than a technique problem. A worn pump, a failing OPV (over-pressure valve), or a degraded group head gasket can all drop working pressure below the roughly 9 bar needed to properly emulsify oils and trap CO2, even when every other input is correct. This is the one scenario on this list that fresh beans and a perfect grind cannot fix. Signs pointing to a mechanical cause include: crema that disappeared suddenly rather than gradually, a shot that runs unusually fast even at a fine grind setting, or a pump that sounds noticeably different than usual during the pull. A qualified technician or the manufacturer's service line can check pump output and gasket condition; regular descaling on the schedule specified for a given machine also prevents mineral buildup from affecting pressure over time.

Crema Is Not a Quality Guarantee
Crema looks impressive, but on its own it does not taste particularly good, it carries a fair amount of the bitterness in a shot, and some experienced baristas skim part of it off before drinking. Thick, persistent crema is a reasonable indicator of fresh beans and a competent extraction, but it is an indicator, not the goal itself. A well-balanced shot with modest crema from a light roast beats a bitter, over-extracted shot with a thick, showy crema layer every time. Log shot times, doses, and crema notes with an espresso shot journal to separate genuine extraction problems from normal, expected variation between roast levels and bean ages.
Start troubleshooting disappearing crema with bean freshness, since that single factor resolves the issue for most people without touching a single machine setting. From there, dial in grind size against shot time, confirm brew temperature is in the 195-205°F range, and switch to grinding immediately before each shot if pre-ground coffee is in the routine. If all of that checks out and crema is still missing, the next look should be at the machine's pump and gasket rather than the beans. Descaling on the interval specified for the water hardness in the area, often every 1 to 3 months for hard water, keeps mineral scale from restricting flow paths and quietly reducing pressure long before crema visibly suffers.
