Pour over brewing turns three ingredients, hot water, ground coffee, and gravity, into a clean, well balanced cup with almost no equipment cost. There is no pump, no boiler, and no proprietary pod. The entire process is controlled by four variables: grind size, water temperature, pour rate, and total brew time. Get those four numbers right and the cup improves immediately.
This guide covers the full beginner workflow: which dripper to buy, how to dial in a 1:16 ratio, how long the bloom should run, and how to fix a cup that comes out sour or bitter. Every number below is a starting point you can adjust once you taste the result.
What You Need
Pour over has a short gear list, and none of it needs to be expensive:
- A pour over dripper. The Hario V60 and the Kalita Wave are the two standard choices for a first dripper.
- Paper filters sized for your dripper. Bleached (white) filters carry less papery taste than unbleached brown filters.
- A gooseneck kettle. A standard kettle pours in an uncontrolled gush; a gooseneck lets you control flow rate within a few milliliters per second. Budget models run $30-40.
- A kitchen scale accurate to 1g. Coffee ratios only mean something if both sides of the ratio are measured, not eyeballed.
- A burr grinder. Burr grinders produce a consistent particle size; blade grinders chop unevenly and create both dust and boulders in the same dose. A hand grinder like the Timemore C2 (about $60) will out-perform a $200 blade grinder.
- Fresh coffee beans, roasted within the last 2-4 weeks. Beans older than 4-6 weeks have lost most of their CO2 and will barely bloom.
V60 or Kalita Wave: Choosing Your Dripper
Both drippers are widely available and produce excellent coffee, but they behave differently and forgive different mistakes.

A 1:16 ratio (15g coffee to 240g water) makes a fuller-bodied cup. Move to 1:17 (15g to 255g) for a lighter, more tea-like cup with the same beans. Both ratios sit inside the range most specialty coffee shops use for filter brewing.
Step-by-Step Brew Process
Step 1: Heat Your Water
Bring water to a full boil, then let it sit off heat for 30-45 seconds. That drop brings it to roughly 200°F (93°C), the target range for pour over.
Step 2: Rinse the Filter
Set the paper filter in the dripper, place the dripper on your mug or carafe, and pour hot water through it. This removes papery taste from the paper and preheats the dripper and mug so the brew does not lose heat on contact. Discard the rinse water before adding coffee.
Step 3: Grind and Dose
Grind 15g of coffee to a medium setting, in the 400-700 micron range, similar to coarse sea salt. Add the grounds to the rinsed filter and give the dripper a gentle shake to level the bed. An uneven bed causes water to funnel through the low spots first, extracting them faster than the rest.
Step 4: Bloom
Start your timer and pour 30-45ml of water (roughly double the dry coffee weight) over the grounds in a slow spiral, saturating the bed evenly. The coffee will swell and release gas for 30-45 seconds.
Step 5: Pour in Stages
After the bloom finishes, add the remaining water in 2-3 pulse pours rather than one continuous stream. Pour in slow, concentric circles moving from the center outward, keeping the water level about halfway up the filter and staying away from the paper edge. Each pulse should add roughly 60-90ml, timed so the bed never fully drains between pours. Total time from the start of the bloom to the last drip should land between 2:30 and 3:30.
Step 6: Enjoy
Lift the dripper away from the mug once the water has drained, give the coffee a gentle swirl to even out temperature, and let it sit for a minute before drinking. Coffee brewed at 200°F is still too hot to taste sweetness and acidity accurately right off the drip.
Troubleshooting
- Sour or thin? Under-extracted. Grind finer, raise water temperature toward 205°F, or extend the total brew time.
- Bitter or harsh? Over-extracted. Grind coarser, lower water temperature toward 195°F, or shorten the brew time.
- Brew finishes before 2:30? Water is moving through too fast. Grind finer in small increments.
- Brew runs past 4:00? Water is moving through too slowly. Grind coarser.
- Flat or dull flavor even at the right ratio? Check the roast date. Beans past 6 weeks off roast rarely bloom well and lose most of their aromatic complexity.
Water Matters More Than People Expect
Pour over coffee is roughly 98.5% water, so water chemistry has an outsized effect on the final cup. Distilled water tastes flat because it has no minerals to carry flavor. Heavily filtered tap water with 50-150 ppm total dissolved solids and moderate hardness (roughly 50-100 mg/L calcium carbonate) extracts more evenly and tastes noticeably sweeter than either distilled water or unfiltered hard tap water. If your tap water tastes off on its own, it will taste off in the coffee too, run it through a basic carbon filter pitcher before brewing.
