Espresso Grind Size Explained: How to Dial In Your Shot

Espresso grind size sits in a narrower window than any other brew method: roughly 200 to 300 microns, compared to 700-1000 microns for drip and 800-1200 microns for French press. That narrow range is why espresso is the brew method most sensitive to grind adjustment, and why a single click on a grinder can turn a 25-second shot into a 15-second one.
Why the Micron Range Matters
Grind size controls flow resistance. At 200-300 microns, coffee particles pack tightly enough in the portafilter that 9 bars of pump pressure need 25-30 seconds to push 36g of liquid through an 18g puck, the standard 1:2 ratio. Move the grind coarser and water finds larger gaps between particles, cutting flow time. Move it finer and the puck resists flow harder, extending time and increasing the risk of channeling.

The exact micron number matters less than consistency of particle size. Two grinders both set to "produce roughly 250 microns" can pull differently if one has a wider particle-size distribution: a spread of fines and boulders around that average creates channeling, where water carves a fast path through the coarser gaps while the fine particles clog and over-extract elsewhere in the same puck. A shot can taste both sour and bitter at once when this happens, sour from the channeled water and bitter from the choked pockets.
Too Fine vs Too Coarse: What Actually Happens

Grinding too fine packs the puck so densely that water can barely move through it. At the extreme, an espresso machine's pump will fight the resistance and the shot may not flow at all, or it comes out in thick, dark drips instead of a steady stream, pulling excessive bitter compounds out of the grounds in the process. Grinding too coarse does the opposite: water rushes through the loose puck in under 20 seconds, pulling mostly the fast-extracting sour and acidic compounds before the sweeter, balanced compounds have time to dissolve, leaving a thin, sour, weak-bodied shot with little crema.

Step 1: Start in the Middle
With a new grinder or new beans, start at the middle of the grinder's recommended espresso range. Most conical burr grinders mark this range on the dial; if yours doesn't, start around 200-250 microns equivalent and adjust from there.
Step 2: Pull a Shot and Weigh It
Dose 18g into the portafilter, tamp evenly with consistent pressure, and start the shot timer the moment you hit brew. Weigh the output on a scale and stop at 36g for a 1:2 ratio.
Step 3: Adjust One or Two Clicks at a Time
- Shot finishes under 20 seconds? Grind finer, one to two clicks (or a quarter-turn on a stepless grinder).
- Shot runs past 35 seconds? Grind coarser by the same increment.
- Time is in the 25-30s range but tastes sour? Grind slightly finer; the shot needs a bit more resistance and extraction.
- Time is in range but tastes bitter? Grind slightly coarser; you're over-extracting despite hitting the time window.
Step 4: Let the Shot Finish Before Judging It
Wait for the full 25-30 second window before evaluating rather than stopping early out of impatience. Taste the result, adjust if needed, and repeat. Most beans dial in within 3-5 shots once you're tracking dose, yield, and time together rather than adjusting on instinct alone.
What Shifts Your Dial-In Over Time
- New beans: Different origins and roast levels need different settings, and even the same beans from a new bag can need re-dialing.
- Bean age: Coffee off-gasses CO2 for roughly two weeks after roasting. As beans age past that window and degas further, grind progressively finer to maintain the same 25-30 second flow time.
- Humidity: Higher humidity days often need a slightly coarser grind since beans absorb ambient moisture and clump more at fine settings.
- Grinder retention: Leftover grounds from the previous dose mix into the next one. Purge 1-2g through the chute before the first shot of the day to clear stale, stale-tasting retained grounds.
How Burr Type Affects Grind Consistency
Conical burrs (as in the Baratza Encore or 1Zpresso JX-Pro) spin coffee between a cone and a ring, producing a slightly wider particle-size distribution but running cooler and quieter at lower speeds. Flat burrs (as in the DF64 or Eureka Mignon Notte) spin coffee between two parallel rings, generally producing a narrower, more uniform particle-size distribution at the cost of retaining a bit more static-charged fine particles in the chamber. Blade grinders are excluded entirely because chopping time, not a fixed burr gap, determines particle size, producing an uncontrolled mix of powder and boulders in the same batch that makes the 200-300 micron target impossible to hold shot to shot.
Reading the Shot Itself, Not Just the Clock
Time and yield are the primary numbers, but the visual behavior of the shot tells you more before you even taste it. A correctly ground shot at 200-300 microns should start with a delay of 5-8 seconds before the first drops appear (the "pre-infusion" phase on machines that have it), then flow as a steady, syrupy stream, slowing gradually toward the end rather than staying thin and fast throughout. A shot that sprays, spurts unevenly, or shoots out in a thin stream immediately signals channeling, usually from an uneven tamp or an inconsistent grind distribution rather than the average grind size being wrong. Watching crema color also helps: a healthy shot produces a reddish-brown crema that holds for 30-60 seconds, while a too-fine, over-extracted shot often produces a darker, thinner crema that dissipates fast, and a too-coarse shot produces pale, thin crema that barely forms at all.
