Coffee Processing Methods: Washed, Natural, and Honey Explained

The label on a bag of specialty coffee reading "washed," "natural," or "honey" describes the processing method — and it's one of the biggest factors determining flavor, alongside origin and roast level.
What Is Coffee Processing?
Coffee beans are seeds inside a fruit called a coffee cherry. Removing the fruit and drying the seed before roasting is processing, and the method used changes the finished flavor significantly. The seed spends anywhere from a few hours to several weeks in contact with fruit pulp, mucilage, and moisture. During that time sugars ferment and the seed absorbs compounds from its surroundings. More fruit contact generally produces more sweetness and body; less fruit contact produces more clarity and brightness.

Washed (Wet) Process
The fruit is mechanically removed almost immediately after harvest: cherries pass through a depulping machine that strips the outer skin and most of the pulp. The seeds, still coated in sticky mucilage, sit in fermentation tanks filled with water for 12 to 72 hours while naturally occurring microbes break down the remaining mucilage. The beans are then washed clean with fresh water and dried on raised beds or patios for 1 to 2 weeks, targeting a final moisture content of 10-12%.
The result is clean, bright acidity with clear origin character. Because the fruit is removed so early, washed coffees showcase the bean's intrinsic qualities — terroir, varietal, altitude. Most high-end Ethiopian and Colombian coffees are washed; a washed Ethiopian Yirgacheffe typically shows floral and citrus notes with high clarity.
Natural (Dry) Process
The oldest processing method: the whole cherry, fruit intact, is spread on raised drying beds or concrete patios and dried in the sun for 2 to 4 weeks. The fruit stays on the seed throughout, and sugars from the fruit ferment and infuse into the bean during drying. Workers rake and turn the cherries regularly to prevent mold and ensure even moisture loss down to the 10-12% target.
Natural coffees are bold, fruity, sweet, and full-bodied, with a heavier mouthfeel than washed coffees — blueberry, strawberry jam, tropical fruit, occasionally a wine-like quality. Overfermented lots can taste distinctly funky or boozy rather than clean.
Natural processing dominates in Ethiopia, where it originated, and Brazil, the world's largest producer, where the dry climate makes it the practical default. A natural Ethiopian Guji or Sidama commonly reads as blueberry-forward.
Honey Process
Honey processing sits between washed and natural. It doesn't involve actual honey — the name comes from the sticky mucilage layer left on the bean during drying, which looks and feels honey-like. The outer skin is removed as in washed processing, but some or all of the mucilage is left on intentionally, and the beans dry with that mucilage still attached, typically over 1 to 3 weeks depending on how much mucilage remains.
The amount of mucilage retained determines the sub-category:
- White/Yellow Honey: Most mucilage removed. Closest to washed in flavor, clean with a hint of sweetness.
- Red Honey: Some mucilage left. More body and sweetness than yellow, moderate fruit notes.
- Black Honey: Nearly all mucilage left. Closest to natural — heavy body, pronounced sweetness, dried-fruit notes.
Honey-process coffees combine more sweetness and body than washed with more clarity and structure than natural — typically a syrupy mouthfeel, caramel-like sweetness, and stone fruit notes. Costa Rica is the most established origin for honey-processed coffee.

Matching Process to Brew Method

Natural-process coffees suit cold brew and French press, where the fruit-forward profile and heavier body carry through a longer steep. Honey-process coffees are flexible across both immersion and pour over methods.
Dialing In by Process
Grind size interacts with processing method. Natural and honey beans often need a slightly coarser grind than washed beans at the same brew method, since their higher sugar content extracts faster. Cross-check target settings with the Grind Size Guide before adjusting dose or brew time.
Beyond the Big Three
Experimental methods are gaining ground in specialty coffee: anaerobic fermentation (sealed tanks, no oxygen, more intense fruit), carbonic maceration (borrowed from winemaking), and lactic process coffees (controlled bacterial cultures added during fermentation). These remain niche relative to washed, natural, and honey, but they build on the same fermentation and drying principles.
